Apple Cinnamon Flax Pancakes

Nothing adds flavor to your morning pancakes like deliciously tart cinnamon and sugar coated apples. With brown sugar in the batter, these pancakes are a sweet treat by themselves, and thanks to ground flaxseed, they also have some nutritional value.

Apple Cinnamon Flax PancakesYou will need:

For Pancakes

  • 1 egg, beaten
  • 2 cups milk
  • 1 tbsp apple cidar vinegar
  • 2 cups wheat flour
  • 1/4 cup ground flaxseed*
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup packed brown sugar
  • 2 tbsp butter

For Apples

  • 2 small granny smith apples, sliced
  • 1 tsp cinnamon
  • Brown sugar (approx. 2 tbsp)
  • Maple Syrup
  • 2 tbsp butter

*Flaxseed must be ground into order for your body to absorb its nutrients. If you purchase whole flaxseeds, you can use a coffee grinder to grind them up before adding them to your pancake batter.

Directions

For Pancakes

  1. In a medium mixing bowl, combine egg, milk, vinegar, flour, flax, brown sugar, baking powder, and baking soda and whisk until blended.
  2. Heat skillet over medium heat and melt the butter in the pan until it is coated.
  3. Ladle the batter onto the pan by 1/2 cup fulls.
  4. Turn when bubbles form on the top of the pancakes, or when the bottom has been browned.
  5. Serve with the apple topping.

For Apples

  1. Heat a small pan or skillet over low heat. Melt 2 tbsp butter to coat pan.
  2. Drizzle maple syrup into pan and add cinnamon. Mix in about 2 tbsp of maple sugar. Note: I did not measure the amount of maple syrup I used. I started by coating the pan, and then I added enough to coat the apples and have some syrup leftover in the pan.
  3. When the sugar has dissolved, add apple slices and sautee the apples until they are softened.

Top your pancakes with a few apples. If you have syrup left in the frying pan, drizzle over pancakes for extra flavor. Enjoy!

Makes: 6-8 pancakes
