Easy Buffalo Chicken Sandwich

Today, I found our freezer stocked with lots of frozen Purdue chicken breasts, and in our refrigerator we had a tiny bit of blue cheese dressing and a bottle of hot sauce. Perfect for buffalo chicken!
You will need:
- Chicken (I used Purdue cutlets, but you can use grilled chicken breasts or whatever kind of chicken you have)
- Hot sauce (I used Frank’s Red Hot Cayenne Pepper Sauce)
- Ranch or blue cheese dressing
- Sandwich bread or rolls
- Cheese slices (optional)
Directions:
- After the chicken has been prepared and cooked, dice it and put in a mixing bowl.
- To the mixing bowl, add hot sauce and dressing as desired. Stir ingredients together, taking care to coat the chicken evenly.
- Spoon the mixture onto your sandwich bread. Top with a slice of cheese, if desired.
- You have several options now: 1) If your chicken is warm enough, eat the sandwich as is. 2) Place on top of tin foil and toast the sandwich in the toaster oven. This will melt the cheese and give the bread a nice crunch. 3) You can grill the sandwich and turn it into a panini.
- Serve with multi-grain tortilla chips and enjoy!
