Barbeque Chicken Flatbread Pizza

This flatbread pizza makes an easy meal-for-one or a perfect party appetizer for your friends. Savory barbeque chicken and bacon make this little pizza absolutely mouthwatering!

You will need:

  • 1 bottle BBQ Sauce
  • Pre-cooked ground or diced chicken
  • Bacon
  • Shredded Monterey Jack cheese
  • Pita bread or flatbread rounds


  1. Place your pita(s) on a baking sheet or piece of tin foil.
  2. Prepare your chicken and bacon. I used plain grilled chicken slices that were leftover from another meal, but you can also use pre-cooked Purdue grilled chicken slices from the store. Cook bacon according to package directions (I had to improvise with bacon bits, but I normally prefer to use the kind that microwaves in 30 seconds).
  3. In a small mixing bowl, combine chicken with desired amount of barbeque sauce. Once the chicken is coated, spoon it on top of each pita.
  4. Cut into small pieces and add to the pizza. Sprinkle with shredded Monterey Jack Cheese.
  5. If you’re just making one for yourself, you can heat it in the toaster oven until the cheese melts. If you are making multiple pizzas, place the baking sheets in the oven at 350°F and cook until cheese is melted, about 5-8 minutes.

Tip: For additional crunch, top with a few dry-roasted peanut nibs before baking.
