Red Quinoa Pasta Salad

This colorful pasta salad is both healthy and delicious! Quinoa is a “super-food” because it’s a source of complete protein, and it’s vegetarian! For this recipe, I used red quinoa to add some extra color. The red beans pack even more protein, while the broccoli adds healthy dose of vitamin C, fiber, and other nutrients.

You will need:

  • Red quinoa (7 oz box)
  • Tri-Color Rotini Pasta (12 oz box)
  • Red beans (15.5 oz can)
  • Box of Tri-Color Rotini Pasta (12 oz)
  • Small-medium head of broccoli
  • Olive oil
  • Red wine vinegar
  • Salt and Pepper
  • Garlic salt


  1. Cook pasta and quinoa according to package directions.
  2. Use a colander to rinse and drain the red beans.
  3. Rinse the brocolli and remove the stems. Cut the florets into small pieces. You can leave the brocolli raw, but I like to lightly sautee mine in olive oil so it isn’t too crunchy.
  4. One the pasta and quinoa are cooked and drained, add both items as well as the beans and brocolli to a large mixing bowl.
  5. Stir in olive oil, vinegar, salt, pepper, and garlic salt as desired. You really don’t have to measure it (eyeball it like Rachel Ray!), but for reference, I used about a quarter cup of oil and a quarter cup of vinegar. (You can substitute your favorite Italian dressing for all of these ingredients).
  6. Cool entire pasta salad in the refrigerator. Serve cold.
