Sweet + Savory BBQ Nachos

These sweet and spicy nachos are the perfect appetizer to serve at a dinner party—your guests wont be able to get enough! A pinch of brown sugar, a dash of paprika, a hint of BBQ sauce, and fresh parsley are among the flavors that make this such a savory snack.
You will need:
- Package of flour tortillas
- Pre-made grilled chicken strips (I always use Purdue)
- 2 small white onions
- Paprika
- Garlic salt
- Chili powder
- Crushed red pepper flakes
- Cayenne pepper powder
- Brown sugar
- Olive oil
- Barbeque sauce
- Fresh parsley
Directions:
- Heat frying pan on med-low heat and coat pan with olive oil.
- Dice onions and chicken into small pieces. Add to pan.
- Add spices (paprika, garlic salt, chili powder, crushed red pepper, cayenne pepper) to taste. GO LIGHT on the cayenne pepper powder, unless you really like spice. Add about 4 pinches of brown sugar (by pinch, I mean that I grabbed one of those small clumps of sugar and crumbled it in the pan).
- Cook until chicken and onions are lightly browned. Stir in a small amount of BBQ sauce (just enough to give it a very light glaze—it’s meant to prevent the mixture from being too piece-y). Turn off the burner and cover.
- Using a culinary brush, lightly coat just one side of a flour tortilla with olive oil. Heat in toaster oven until it’s lightly crisped. The oil will prevent the tortilla from getting crunchy all the way through, so you’ll still have a bit of that soft texture. If you are using a whole box of Purdue chicken, you probably need about 4 tortillas.
- Cut tortilla with a pizza cutter and top with the chicken and onion mixture. Serve with a bit of fresh chopped parsley for a colorful garnish.
