Vegetarian Black Bean Quesadilla

Even meat lovers will fall for the spicy flavors of this mouth-watering black bean quesadilla. Perfectly seasoned peppers and onions make this dish so delicious, you won’t even realize it’s good for you!

You will need:

  • 1/3 cup black beans, canned
  • 1 tablespoon olive oil
  • 1 flour tortilla
  • Grated cheddar cheese
  • One small onion
  • 1/2 medium pepper
  • Salt and pepper
  • Garlic powder
  • Chili powder
  • Ground cumin


  1. Using a knife and cutting board, dice the pepper (I used orange, but red or green work fabulously as well!) and onion. In a small bowl, season with garlic powder, chili powder, salt and pepper, and ground cumin. These seasonings will give it a nice spicy-smokey flavor.
  2. If you are using canned black beans, drain the excess liquids out using a colander and pat dry with a paper towel. Put the olive oil in a small frying pan on medium heat. Add seasoned vegetables and sautee until lightly browned. Add black beans and cook for about two more minutes.
  3. In a larger frying pan on medium heat, warm the flour tortilla for about 1 minute and then flip. Top with grated cheddar (I used a cheddar-jack mix). After cheese has begun to melt, add the veggie-bean mix and sprinkle a little more cheese if needed.
  4. Once the cheese has melted and the tortilla is lightly browned, fold tightly and cut into two pieces using the spatula or a knife.

TIP: This quesadilla tastes delicious by itself, but it also serves well with your favorite salsa!
